Knife Sharpening
This is a summary of sharpening steps for a traditional knife on the ChefChoice Model 15XV electric sharpener.
- Start on left side on odd years
- Start on right side on even years
Sharpening (stage 1)
- Pull blade through left and right slots (3-4 sec/pull for 5” blade)
- Check for burr on last side of pull along entire length
- Repeat until burr is present
Honing (stage 2)
- 1 or 2 pair of pulls (3 sec/pull for 5” blade)
- Check for burr
- Repeat until burr is present
Stropping (stage 3)
- 3 pairs of pulls (3-4 sec/pull for 5” blade)
- 2 pairs of pulls (1 sec/pull for 5” blade)
- Check sharpness

- For meat you can skip stage 2
